Dan Dan Noodles 担担面

Dan Dan noodles is a classic Chinese dish from Sichuan province. It consists of a spicy sauce containing preserved vegetables, chili oil, minced pork, scallions and Sichuan peppers served over noodles. The name refers to a type of pole carried over the shoulder with two baskets attached to either side. Vendors would load these baskets with noodles and sell them to passers-by on the streets.  Gradually the dish came to be referred to as dan dan noodles or “shoulder pole” noodles.

    I really like your blog. I think it's very cool. My 担担面 wasn't anything fancy. I normally purchased the prepared sauce at the 大苏果 and then some noodles, 牛肉,胡萝卜,爆,请教 for a quick meal with lots of 蒜 :)

    Either way keep up the good work - I have to catch up on your other posts!
